pasta with spinach, tomatoes and pine nuts






what you need (for 4-5 people):
  • 500g pasta
  • 300g spinach
  • 2 tomatoes
  • pine nuts
  • rapeseed oil 
  • teaspoon of sambal oelek (optional)
  • smoked salmon (optional)
  • any spices you'd like to use aditionally; I didn't really need anything more but maybe you do?

what you do:
  • cook your pasta and spinach and chop the tomatoes
  • roast the pine nuts in a (big) pan until they have a light brown coloring
  • add a sip of oil, sambal oelek and saute the tomatoes in there
  • tip: don't use olive oil when you plan to heat it up! You'll loose all unsaturated fatty acids which is all what's good about the olive oil in the first place!
  • add the pasta and spinach (and salmon) and blend it all together!
  • in case you need more spices, add those and let it all simmer for a few minutes so the flavors of all ingredients can display
